Atiya: I know I talk a lot about how much I love to bake and share what I make in Favorites posts. So this time I thought I should put my cake where my mouth is and share a recipe of these delicious cookies with a twist!
I am the biggest fan of Sally’s Baking Addiction and I recently got her cookbook. After drooling over the pictures, I decided to get to work (read: make a mess). So after Amna and I got the invite to Cadbury’s Marvellous Creation event I thought why not make a marvellous creation of my own? And so I present to you, Cake Batter Marvellous Chunk Cookies!
I really liked the Cadbury Marvellous Creations chocolate the first time I tried them. I hate raisins or anything chewy in chocolate but the mixture of gummy candy and cookies really works in this bar. I still prefer the poppin’ candy one over the cookies one because it is like eating a grown-up chocolate with a child-at-heart center. Whoa, are we getting emotional about chocolate? It is really good, guys! And when combined with Sally’s Cake Batter Chocolate Chip Cookies you get a party in a cookie that is seriously addictive. The colorful candy in the bars mirrors the colorful sprinkles in the cookies for a fun, rainbow-colored confection.
Here’s what you will need:
1 1/4 cups all-purpose flour
1 1/4 cups yellow cake mix (I used Betty Crocker’s French Vanilla mix)
1/2 tsp baking soda
3/4 cup unsalted butter, softened
1/2 cup caster sugar
1/2 cup dark brown sugar
1 1/2 tsps vanilla essence
1/2 cup Cadbury’s Marvellous Creations chocolate bars, chopped (I used two 38g bars)
1/2 cup white chocolate chips
1/2 cup sprinkles
- Sift the flour,cake mix and baking soda together in one bowl and set aside.
- Using a stand mixer or a hand mixer, cream together the butter and sugars until fluffy. Add the egg and vanilla and mix until combined.
- Add the dry ingredients to the wet ingredients and mix. I was too impatient to do this part slowly as the recipe said and dumped the whole lot in. It was still fine so do as you like.
- Add the Marvellous Creations chunks, white chocolate chips and sprinkles to the dough and using a spatula, bring it all together, pressing the chocolate and sprinkles into the dough. Since this is a lot of chocolate the dough will get oversaturated but persevere and you’ll have a compact mixture.
- Chill the dough for the recommended two hours. I was like ain’t nobody got time fo dat so I only chilled it for 50 minutes but it is imperative you chill the dough. I have learned through many terrible flat and burnt cookies that chilling the dough hardens the butter and makes it spread less when you bake them.
- Once you have been patient long enough, line a baking sheet with parchment or a silicone baking mat. Using a cookie scoop or a two tablespoons shape balls of dough and flatten them a bit. Put them on the tray, spaced two-inches apart.
- Bake at 180 degrees for 10-12 minutes. They will look undercooked but that is fine, they will continue to harden once they come out of the oven and you’ll get a soft chewy cookie. Wait a few minutes before transferring to a wire rack. I was too eager with my second batch and they broke because they were too soft. Learn from my mistakes, guys.
- Once they are cooled and looking very tempting, make a cup of tea and eat them up. We won’t blame you if you don’t share.
Amna: I had the pleasure of attending the Cadbury Marvellous Creations event at Dolmen Mall. To be honest, I am not as huge a fan of the chocolate as Atiya is but that’s because I don’t like anything mixed in my chocolate like nuts, fruit or other candy. I’m more into plain Dairy Milk.
The event was nice. They had some fun games and activities and I love the carnival aesthetic going on. Although it was very crowded, I did manage to get at least one good selfie so yay!
