Hello, y’all and welcome to day 2 in our Ramadan #MadeEasy series. Today we are taking it up a notch, dhaba-style! Paratha and chai are staples for me and Amna so we decided to try out the Pizza Paratha on MadeEasy.
Now, I thought it resembled a quesadilla more and a pizza less so I added my own spin to it. Did not fold it over so it would look like a pizza and added more cheese on top because let’s face it, life is better when there is more cheese. Alright, here’s what you have to do:
You will need:
250 grams boneless chicken, sliced into strips
1 tablespoon ginger/garlic paste
2 tablespoons National Tikka Boti Masala
Squeeze of half a lemon
1 capsicum, sliced into strips
1 onion, sliced thinly
Frozen paratha, as required
- Marinate the chicken in the ginger/garlic paste, tikka boti masala and lemon juice and leave for 30 minutes. I forgot about the lemon juice as I had my mom do this step while I was at work, thought you should know this tiny detail.
- Anyway, fry the chicken in 2 tablespoons of oil and towards the end of it’s cooking time, add the pepper and onion and stir-fry till the vegetables are tender-crisp.
- On a non-stick pan, fry one paratha on one side, flip over and top with a layer of shredded cheese, the chicken mixture and more cheese to bind it all together. Put a lid on top of the pan to melt the cheese and cook the other side of the paratha. Full disclosure, I burnt the bottom of one but it’s okay guys you live and learn.
- Slide the paratha out, slice into quarters and serve! Woven platters and a cup of chai are optional.
I would say this was a super easy recipe because you really just needed to prepare the chicken, the rest was all assembly. I noticed yesterday with the peri bites and the chicken mixture today, both masala mixes made the meat very succulent and tasty so thumbs-up National Foods!
